Ingredients
- 2 cups whole wheat flour
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped coriander leaves
- 2-3 green chilies, finely chopped
- 1 tsp cumin seeds
- 1 tsp carom seeds (ajwain)
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 2 tbsp ghee (clarified butter) or oil
- Salt to taste
- Water as needed
Method
Step 1
Mix Ingredients: In a large mixing bowl, combine the whole wheat flour, chopped onions, coriander leaves, green chilies, cumin seeds, carom seeds, turmeric powder, red chili powder, and salt.
Step 2
Add Ghee: Add the ghee or oil to the dry mixture and mix well with your hands until it resembles breadcrumbs.
Step 3
Knead the Dough: Gradually add water and knead the mixture into a semi-soft dough. It should not be too soft or too hard. Cover the dough and let it rest for 10-15 minutes.
Step 4
Divide and Roll: Divide the dough into equal portions and roll each portion into a ball. Flatten the balls slightly with your hands.
Step 5
Cook the Koki: Heat a tawa (griddle) over medium heat. Roll out each ball into a thick roti (about 1/4 inch thick). Place the rolled koki on the hot tawa.
Step 6
Cook Until Golden: Cook the koki on both sides until golden brown spots appear. Apply a little ghee or oil on each side while cooking.
Step 7
Serve: Serve hot with yogurt, pickle, or any curry of your choice.
