Missi Koki is a Sindhi flatbread, similar to Missi Roti, but it’s thicker, more crumbly, and slightly spiced. It’s traditionally made with a mixture of whole wheat flour and gram flour (besan), flavored with onions, spices, and herbs.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup gram flour (besan)
  • 1 small onion, finely chopped
  • 1-2 green chilies, finely chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1/2 tsp carom seeds (ajwain)
  • 1/2 tsp cumin seeds (jeera)
  • 1/4 tsp turmeric powder (haldi)
  • 1/4 tsp red chili powder (optional)
  • 1/4 tsp dried mango powder (amchur) or a squeeze of lemon juice
  • Salt to taste
  • 2 tbsp oil or ghee (for the dough)
  • Water as needed
  • Ghee or oil for cooking

Method

Step 1

Prepare the Dough: In a mixing bowl, combine whole wheat flour, gram flour, chopped onions, green chilies, coriander leaves, carom seeds, cumin seeds, turmeric powder, red chili powder, dried mango powder, and salt. Add 2 tbsp of oil or ghee to the mixture and mix well until it resembles coarse crumbs. Gradually add water, a little at a time, to knead the dough. The dough should be firm and not too soft. Let it rest for 10-15 minutes.

Step 2

Shape the Koki: Divide the dough into equal-sized balls. Take one ball, flatten it slightly, and roll it out into a thick disc (about 4-5 inches in diameter). Koki is typically thicker than regular rotis.

Step 3

Cook the Koki: Heat a tawa (griddle) on medium heat. Place the rolled-out Koki on the hot tawa and cook on one side until small bubbles appear. Flip it over and drizzle some ghee or oil on the cooked side. Cook until the other side is golden brown. Flip again and apply ghee or oil on the second side as well, pressing gently with a spatula for even cooking. Cook until both sides are crispy and golden.

Step 4

Serve: Serve Missi Koki hot with yogurt, pickle, or any side dish of your choice.
